1 Lime (cut in half)
1 1/2 Tablespoons fine sugar
8 Mint leaves (and a sprig for garnish!)
2 Ounces Malahat Rum ( use Malahat Ginger Rum for a fun twist on the classic)
1 Cup ice
Splash of club soda
Squeeze lime into a mixing glass, add sugar and mint. Muddle. Add Malahat Rum, previously squeezed lime halves and ice to glass. Stir. Pour into tall glass, top with club soda and garnish with a sprig of mint.
